Very simply. The best 4 barrels from our many batches of Cabernet Sauvignon have been held back, bottled with low intervention and then matured in bottle for 3 ½ years. The extended maturation in bottle rather than in oak is a conscious move to ensure the wine develops complexity but without losing its vibrant fruit character. This wine is still really fresh, with a good deep colour and already belies its age. ‘Seamless’ is a descriptor that describes it well.
